Tuna Rice Bake

Serves 5

2 tbsp butter

1 clove garlic, crushed

1 onion, chopped

2 stalks celery, sliced

1 tbsp flour

1 cup milk

2 eggs

¼ cup grated cheese

425g can tuna, drained and flaked

salt

pepper

2 cups cooked long grain rice

chopped parsley

·      Melt butter in a saucepan. And cook garlic, onion and celery until clear.

·      Stir in flour and cook until frothy.

·      Gradually add milk, stirring constantly until mix boils and thickens. Then remove from heat.

·      Add eggs and cheese, beating until combined.

·      Stir in tuna and season with salt and pepper.

·      Combine tuna sauce and rice and pour mix into a greased ovenproof dish.

·      Cook at 180°C for 20 mins.

·      Garnish with parsley and serve hot or cold.
