Shortbread

250g butter

1 cup icing sugar

1 cup cornflour

2 cups flour

·      Cream butter and icing sugar until light and fluffy.

·      Sift cornflour and flour together.

·      Mix sifted ingredients into creamed mix. Knead well

·      Form dough into a long roll. Cut into 0.5cm slices.

·      Place on a greased oven tray. Prick with fork.

·      Bake at 150°C for 30 mins or until pale golden.
