Shepherd’s Pie

Serves 4

1 tbsp oil

1 onion, chopped

500g lean beef mince

2 tbsp flour

1 tbsp tomato sauce

1 tbsp chutney or relish

¾ cup liquid beef stock

3 potatoes, chopped

1 tbsp butter

1tbsp finely chopped onion

½ cup grated tasty cheese

·      Heat oil in a large frying pan and cook onions until clear.

·      Add mince and cook until well browned, stirring constantly.

·      Stir in flour and cook for 1 minute.

·      Add tomato sauce, chutney and stock.

·      Bring to the boil, reduce heat and simmer for 5 min.

·      Set aside

·      Cook potatoes until tender.

·      Mash potatoes, add butter and half the cheese and mix until smooth and creamy.

·      Season with salt and pepper.

·      Put mince into a pie dish and top with potato mix.

·      Sprinkle with remaining cheese and bake at 290°C for 20 mins.
