Pilaf

Serves 4

25g butter

1 large onion, chopped

1 cup long grain rice

2 cups liquid chicken stock

salt

pepper

25g butter

2 tbsp chopped chives

·      Melt first measure of butter in an ovenproof dish.

·      Add onions until clear.

·      Stir in rice and cook for 2 mins, stirring constantly.

·      Pour in stock and season with salt and pepper.

·      Bring to boil.

·      Cover and bake for 20 mins at 220°C or until rice is tender.

·      The rice should be quite dry.

·      Add second measure of butter and chives before serving.
