Macaroni Cheese

Serves 6

2 tbsp butter

1 small onion, finely chopped

2 tbsp flour

½ tsp dry mustard

2 cups milk

salt

pepper

2 cups grated cheese

2 cups macaroni

·      Melt butter in a saucepan and cook onions until clear.

·      Stir in flour and cook until frothy.

·      Add mustard and gradually add milk, stirring constantly until sauce thickens.

·      Remove from heat and season with salt and pepper to taste.

·      Stir in half the cheese.

·      Stir in the pasta to combine.

·      Pour mixture into an ovenproof dish.

·      Sprinkle over the remaining cheese.

·      Cook for 20 mins at 190°C or until golden and heated through
