Fried Rice

Serves 4

2 cups cooked long grain rice, buy ready to microwave

2 eggs

1 tsp soy

3 tbsp oil

6 rashers bacon, chopped

1 clove garlic, crushed

2 tsp grated root ginger

6 spring onions chopped

1 tbsp soy sauce

·      Lightly beat eggs and first measure of soy sauce.

·      Heat 1 tbsp of oil in a wok (or wok like pan).

·      Pour in egg mixture and cook until golden and set aside.

·      Heat another tbsp of oil and cook bacon until crispy and set aside.

·      Cook garlic, ginger and spring onions over a low heat.

·      Heat remaining oil, add rice and fry for 5 mins.

·      Return stripes of eggs and bacon to wok.

·      Add second measure of soy and stir to mix
