Fish Cakes

Serves 4

250g cooked fish

2 cups cold mash potatoes

1 small onion, finely chopped

¼ tsp mixed herbs

1 tsp salt

pepper

1 tbsp chopped parsley

1 egg

1 tbsp water

1 – 1½ cups breadcrumbs

oil for shallow frying

·      Flake fish

·      Place potatoes, onion, herbs, salt pepper and parsley in bowl and mix well with fish.

·      Divide mix into eight even portions and shape into rounds.

·      Lightly beat egg and water together.

·      Dip each cake into mix and coat with breadcrumbs.

·      Heat oil in large frying pan. Fry fish cakes until golden and cooked.

·      Drain on absorbent paper.
