Curried Sausages

Serves 5

2 tsp oil

8 sausages

1 onion, chopped

1 tsp hot curry powder

1 tbsp flour

¾ cups liquid beef stock

·      Heat oil in a frying pan and cook sausages.

·      Remove sausages and pour off all but 2 tbsp of fat.

·      Add onion and cook until clear.

·      Stir in curry powder and cook for 30 sec, then stir in flour and cook for further 30 sec, then gradually add stock à stir constantly until mix boils!

·      Reduce heat and add sliced sausages. Cook for further 5 mins. Serve with rice.
