Chilli Con Carne

Serves 6

1 tbsp oil

2 onions, chopped

1 clove garlic, crushed

1 green pepper, chopped

500g lean beef mince

1½ tsp chilli powder

1 cup water

300g tomato paste

¼ tsp oregano

salt

465g red kidney beans

·      Heat oil and fry onions, garlic and pepper until onion is clear

·      Stir in meat and cook until meat is browned

·      Add chilli powder, water, tomato paste, oregano and season with salt

·      Bring to boil, stirring constantly

·      Reduce heat and simmer gently for 30mins or until mix is quite thick.

·      Add beans to pan and continue cooking for a further 10 mins, stirring occasionally
