Chicken Curry

Serves 4

1 tbsp oil

2 cloves garlic, crushed

1 onion chopped

1 tsp grated root ginger

1 tbsp curry powder

1 cup liquid chicken stock

4 chicken breasts

·      Heat oil and cook garlic, onion and ginger.

·      Stir in curry powder and cook for 30 sec.

·      Add stock and chicken.

·      Cover and bring to the boil.

·      Reduce heat and simmer for 30 minutes or until chicken is tender.

·      Serve with rice.
