Kartoffelpuffer a la Mimi

Serves 2

1kg potatoes

1 onion

2 eggs

2 tbsp flour

salt

pepper

some oil to fry

and cheese, if you like

·      Peel potatoes and grate. A cheese grater will do.

·      Peel onion and grate into the same bowl. Careful! You will cry!

·      Add eggs, salt, pepper and flour. Mix thoroughly.

·      Heat oil, medium heat, and place little amounts, flattened, of the potato mix in the frying pan. Fry until golden and crispy on both sides

·      Keep cooked puffer on a tray in the oven warm.

Mimi’s Tip!: Tastes good if you sprinkle some cheese on top. Some Germans eat Kartoffelpuffer with mashed apples. But I prefer ketch-up!
